You guys already know that I’m not super into cooking, right? I mean, I’ll do it if I gotta eat, but it’s not a hobby or anything. So sometimes an excuse to cook really helps. Today, I have an excuse. But I’ll get to that.

I decided to make chicken and asparagus lemon stir fry.

I admit that this is partly because my husband randomly bought some asparagus and so pretty much all I had to do was buy chicken, and I actively dislike going to the grocery store and try to make my trips there as quick as possible. (I go with a list, I do not browse, I get right down to business, and I do not flirt with other shoppers, so those of you in the thirty-something age bracket looking for wife number 2 at the grocery store, know that not everyone is in that frame of mind. Just sayin.)

I promise I’m still going to get to the part where I have an excuse to make this particular dish, but for the moment, I will tell you that it took for-freakin’-ever to chop all the chicken and asparagus.

There are a few other ingredients you need, too:

And here’s where I tell you that I’m too damn lazy to run a real test kitchen, but you already knew that. The recipe called for mixing a bunch of stuff in two separate bowls and taking stuff out of the pan and then putting it back in and blah blah blah. Nope. Everybody in the pool. That’s how we roll. So I mixed all the sauce stuff in one bowl.

Ok. Ok. Are you guys ready? Because this is the part where I have an excuse to cook. I put in the asparagus…

And then I got to use my brand new, fancy, pretty Jord watch to time how long I cooked it for! Eeeeee!

I can’t tell you how many compliments I’ve gotten on this thing since I’ve started wearing it. Yes, it’s made of wood. (This one is maple.) It’s so cool, and super pretty. There are lots of other ones to pick from, too, and I had a really hard time picking this one.

So anyway, I timed the asparagus cookin’ with my new fancy watch.

And then I added the chicken.

And then I timed it again. Eeeee!

(You guys, seriously, this watch is the shit.)

Ok, ok, I’ll stop. Anyway, I cooked the chicken.

And then I added the sauce, and I gotta say, I think my corn starch is broken, because this is not the first time I have noticed that my corn starch does not perform. I mean, it’s supposed to thicken the sauce, right? So when your shit doesn’t thicken like it’s supposed to, it’s kind of a performance issue. (Eeeheehee, I am a child.) Anyway, the sauce did not do like I thought it would, but I dished it up anyway and we ate it.

And you know, it wasn’t horrible. The sauce was tasty, if thin, and I thought it was good, although the Husband Of More Salt Please added salt to it, which I thought was unnecessary. Anyway, we’ll give it a good solid “meh.”

    Any thickener (corn starch, flour, etc.) needs to be brought to a boil before it will thicken, and usually needs to boil for a minute or two.

      I did boil it, but the problem might have been that I didn’t boil it separately– just dumped it in with all the stuff and THEN brought it to a boil. So I dunno.

        Bingo! Remove whatever’s in the pan, make your sauce, then add it back 🙂

          For the record, the recipe DID say to do it that way (take everything out, make sauce, then add it back), but I went rogue, because I’m like that. Sigh. Oh well.

            Yup, your “everybody into the pool” killed your sauce. Sometimes instructions are there for a reason and not just to make you crazy…

    I have issues with cornstarch too. Either it doesn’t thicken ( I think I don’t add enough sometimes) or it it gets WAY too thick and I end up with something that looks like snot. Not too appetizing!

    I need to go to your grocery store, no one ever flirts at mine. I always get excited when I see the fire truck there, I enjoy mildly stalking the firefighters around the store.

        Well no one ever flirts with ME, but there are lots of people that flirt with EACH OTHER and they play music from the 90s which makes me think they’re trying to get people of my era to feel all happy and flirty. I don’t know. It’s a theory.

    “the Husband Of More Salt Please” I love this! My husband adds salt to everything I cook BEFORE HE TASTES IT–except for the one thing that I know needs salt: steak. Go figure.

    Here is some cornstarch advice: You will have to use two bowls, though. You need to add the liquid to your dish and boil it. Then add your cornstarch to COLD water in a separate bowl, and add that to the boiling liquid in your pan. The sauce will then thicken. You can’t just add the dry cornstarch to the hot liquid or it will clump. You have to dissolve it in cold water first.

    I am so glad the office is randomly quiet today because nobody witnessed me laugh so hard (heh) at “Nope. Everybody in the pool.” that I legit spit/drooled water out my mouth all over my desk and boobs. Luckily my keyboard was pushed back and I avoided having to call IT for a new one.
